Tomato Roses

Ingredients and Tools Needed:1 a little bit of patience
1 medium tomato, washed & dried
1 cucumber, washed & dried
A very Sharp paring knife

*NOTE: You need a long continuous strip of peel to do this.
Place the tomato bottom side up in your hand. Take the paring knife and cut a circle of skin from the bottom being careful not to cut it off. Now with a continuous motion peel the skin about 1/2 - ¾ inch in width all the way around the tomato. You will end up on top. Now take the end you just finished cutting off and working on a cutting board, start winding the tomato peel around itself being careful to not break the peel. When you reach the end, your flower will sit on the circle you cut first. Place on your salad or on a vegetable platter as a garnish. This is a very lovely accent.

Cucumber Flower

Starting on one end of the cucumber cut a circle of peel from the end being careful to not to cut or break the peel. Peel the cucumber until it reaches about 8” in length. Cut the peel there. Now with the end you just cut and working on the cutting board as a base, roll the peel up all the way to the circle and sit the roll on top of it. Now you have a cucumber rose or flower. Use as an accent on a plate, in your salad or on a veggie platter.
Then say, hey look what I did!

I did the tomato roses for our salad the other night and my sweet son came up and said Hey that’s pretty. Who’s coming for dinner? I then explained that I did it for the whole family just for fun. Why not do the same?

Heavenly Eggs with Carrot Knots

Ingredients and Tools Needed

6 Hard boiled eggs peeled
3 + Tablespoons of mayonnaise
Dash of Curry Powder
Salt
Carrot, cleaned and peeled
Vegetable peeler
Crinkle cutter
Spoon & fork
Small Bowl
Pastry Bag with wide open star tip
Paring knife
Ruler 6 or 12 inch

Take the crinkle cutter and slice the eggs in half long wise. This gives them a pretty crinkled edge. Now take the yolk and put in the small bowl. Do all the eggs this way and then put all the eggs on a nice plate. Next take a fork and mash up the yolks really well. Add the mayo and a dash of Curry Powder. I like Curry because it gives it a nice flavor. Add a dash of salt and then mix with your spoon thoroughly. Now fill the pastry tube with the egg yolk mixture. Be careful to seal the top end of the bag so that it does not ooze out. Fill all the eggs with mixture. Rinse out your bowl and fill with hot water form the faucet. Now take your carrot and with the peeler, peel off a nice long strip. With the ruler, place it on top of the carrot strip and cut a long very narrow piece with the paring knife all the way down the length of the carrot strip. It should be about 1/8 of an inch wide or a little less. Cut one for each egg. You may need to peel of more strips from the carrot. Place each cut piece in the bowl of warm water to make them pliable. Take the carrot strip and gently fold into a knot and place on top of the egg yolk and break off a little of the excess on both ends. This is fun to do and looks pretty too.

Cantelope Picnic Lights

Ingredients & Utensils:

1 Large cantelope
V-shape cutting knife
or small sharp cookie cutters (must be thick enough to go through the cantelope and be pulled out)
a sharp 6 ” knife
Small 1″-2″ candle with holder
Fire safe plate

With knife cut about 1 ” off the stem side of cantelope so that it will sit flat.
Next, scrape out bottom of the fruit along with the seeds making sure that the inside is nice and clean.
Pick the desired shape cookie cutter and starting at the bottom press through the outside skin into the flesh. (Save these cutouts for later for further decorations on another project or fruit bowl).
Do this until you reach the top of the cantelope and make sure you make a cutout on the top for flame ventilation. (We are not sure how many guests will be into the scents of roasted cantelope).
Place your beautiful creation on a fire safe plate and put your candle with holder under and light. Enjoy.
